HOW LONG WILL TRUFFLES KEEP?

I’ve been asked this question by customers at the Christmas markets I’ve been attending so thought I’d post something on the subject. It’s not as easy to give a definitive answer as you might think. A lot depends on the ingredients, the water content, how they are stored etc.

Alcohol will extend the shelf-life of the truffles, as will honey, which is a natural preservative. In general, it’s not ideal to store the chocolates in the fridge. Professional chocolate display cabinets keep chocolate at a more ambient temperature and lower humidity that domestic fridges. The best option is to store your truffles in an airtight container in a cool room. However, you can refrigerate (or freeze) them if you follow this advice from Lauren Deitsch, the Research & Development Specialist /Chocolatier at Lake Champlain Chocolates in Burlington, Vermont -

“Before placing in the fridge, make sure the chocolate is tightly wrapped to prevent it from picking up odors or condensation. And when you remove it from the fridge, let it come back to room temperature before unwrapping. Stored this way in your fridge, they’ll last for anywhere from three to six months.”

I use only good quality, fresh ingredients in my truffles and make them as close to the date I am going to sell or deliver them as possible. In my opinion, the flavour and texture (mouth feel) of the truffles does degrade if they are kept for too long. My advice is to consume them within 3 or 4 weeks as I want then to taste as good when you eat them as they did when I made them!
